Nearly Raw Rice Galette Wraps


This is another option for wraps even though it isn't essentially raw (Rice Galettes - non raw) but I needed a change from sushi rolls and I can't get hold of collards in this part of France to do the popular collard wrap. So...... I thought I would give these a go.


There are very few ingredients in these particular Rice Galettes that I purchased - Rice flour, water, tapioca and salt). They simply need to be soaked for a few minutes in tepid water and then they are ready to go :0)


I had already marinated some cauliflour florets in nutritional yeast and salt as I made these to have as 'raw popcorn'  ( courtesy of Philip McCluskey's  demo a few weeks back in Winchester GB) which I have the leftovers in the DH as I type to enable more of a crunch to them. These are divine 'as is' but it is the first time I have made them so wanted to experiment with them a little.


All I did was take a few of them and blend them up to the consistancy of 'rice' in my Tribest 'forever faithful' blender.


Meanwhile (as the rice galette was soaking happily) I mashed up 1/2 an avocado.


I chopped up some mushrooms, onion and courgettes and marinated these for about 5 minutes in samo shoyu and agave and let them sit whilst I cut the drying rice galette into a square.


I then placed it altogether on the rice galette.


You simply fold over the two sides...........


.....and then the two ends.......




Then turn over et 'voila'..... your 'semi-raw' wrap awaits to be devoured.


The flavours worked well together as well as the mixture of textures too. Obviously, these are simply my chosen ingredients and you can fill the wrap with what ever takes your fancy.


There was no wastage either, as I scooped up the rest of the  filling mixes with the left over 'cut off' galette peices and scoffed it all down :0)


The rest of the 'cauliflower popcorn' was placed on a teflex sheet and is now in the DH. A little something to snack on later this evening me thinks :0)

Yummy! I love this option. I have rice paper at home but didn't think to use it in different ways (I typically make spring rolls with lots of veggies and a peanut sauce but I've never varied). Thanks for this idea.

I have no qualms about nearly raw and keep meaning to buy rice paper- these look delicious :-)

Great recipe, now I want to play around with rice paper wraps. I would love to make a roll with some sort of a raw sweet sauce for dipping.
